“Deltanos” are harvested in “Paria” region by Sucre State, which counts with almost 50% of total cacao productive area in Venezuela.
We believe in growing cacao either fine flavor or conventional bulk in a sustainable form by avoiding the use of agrichemicals, as well connecting to farmers we work with, and helping their communities grow.
We created a network of fermentation centers (cooperatives) strategically located around the most productive areas.
We still manage consistently a natural fermentation protocol to our “Deltano” Bulk conventional beans to a minimum of 50%.
A Trinitario variety that sets our colonial ancestry of different aromas and flavors coming from “Criollo” inheritance.
Strong acidity with a light, bitterness and green raw astringency as a result of low level of fermentation. Yet, it keeps strong taste of cacao and fruits.
